Calculate turnover

Covers served in a service ÷ number of seats. A result of 1.5 means each seat was used one and a half times.

Measure real duration

Note how long a two-top and a four-top actually stay: that’s your booking duration.

A 15- or 30-minute interval between seatings keeps the kitchen from getting everyone at 7 p.m.
